The lampascione is a bulb rich in minerals that grows to a depth of around 15–20 cm underground. Similar to a small onion but with a slightly bitter taste, it requires a curing process of about 10 days to make it sweeter and more palatable. It must be cleaned by careful, expert hands, which use a small knife to remove the outer layers of the bulb one by one. Once arranged in jars by hand, brine is added and they are pasteurised raw. This process preserves their crunchiness and the countless health benefits they offer. |
Cornaletti peppers, also known as Friggitelli, are a native variety from Puglia with a sweet, intense flavour. They have an elongated, horn-like shape, from which the name ‘cornaletti’ derives. Our farm grows them organically in open fields; planted in April, they are harvested between August and October. Hand-picked to select the reddest and sweetest ones, they are washed and halved to remove the seeds and make them easier to digest. They are diced and cooked with extra virgin olive oil, celery and garlic. This preserve, one of the oldest in the Itria Valley, was often served with homemade bread as the farmers’ lunch during the winter months. We are passionate about continuing to share this recipe, handed down by our grandmother, to introduce you to the traditions of Puglia. |

Our Guardacielo chillies are grown in open fields in April and harvested by hand from August to October. They are then carefully selected and washed, before being sliced, salted and left to ‘mature’ for 24 hours. Once ready, they are washed again with water and vinegar and placed by hand into jars with the addition of our own extra virgin olive oil. The result is a hot chilli that is easy to store over time and ready to use whenever you wish. Perfect for those who love a bit of a kick! |
For this product, our company grows plum tomatoes in open fields from April to May. This ensures that the fruit reaches perfect ripeness during the hottest months (July and August). Harvested by hand, they are washed and, only after careful selection, do we proceed to use the best tomatoes, cutting and salting them. They are then seasoned with basil freshly picked from our fields, garlic and our own extra virgin olive oil. |

The Violetto variety of artichokes, typical of Puglia, are grown in open fields and the harvest can last several months, from late November to April. Our experience shows us that the first harvest is the finest and most prized, which is why we use the largest and most fleshy artichokes in our oil-preserved varieties. Within a few hours of harvesting, they are trimmed by hand with a small knife to remove the outer leaves, cut into wedges and arranged by hand in the jars. Once packed, brine is added and they are pasteurised uncooked. This process allows us to offer you a crisp artichoke that retains the countless health benefits this vegetable provides for our bodies. |
Lupins are high-energy pulses rich in minerals such as iron and potassium, vitamin B1 and protein. The countless benefits of this food are still being studied, but it is thought to offer benefits for the cardiovascular system, help lower bad cholesterol and be a good ally for those with diabetes. Consuming 30 grams of this product per day ensures that 25% of the recommended daily intake of protein is met. The plant is grown in open fields during the winter months and produces round, flattened seeds which are left to dry in the sun. The dried seeds are processed for around 10 days to remove the alkaloids they contain. When the lupini beans are ready, they are packed in jars with brine and pasteurised. This process preserves all the properties and benefits of this legume, which can be easily enjoyed as a snack or starter. |
Our extra virgin olive oil is the result of the care and love with which we tend our centuries-old, monumental olive trees – true works of art sculpted by the hundreds of years that characterise their history. The olive groves are situated on both hillside and sea-level land, exposing them to different climates that help give our oil a fruity flavour and a scent of fresh grass and tomatoes. These majestic trees require the olives to be harvested strictly by hand, without the use of mechanical equipment that could damage the trees themselves.
