Onion and Orange Compote, 270g
€5,80Leggi tuttoIn producing this product, as with all our compotes made from ORGANIC red onions, we follow a natural growth cycle lasting around nine months. The onions are planted in open fields during the winter months of October and November and are then harvested in June or July. All cultivation processes are carried out strictly by hand, as are the harvesting, sorting and cleaning. The finished product, as well as being sweet, delicious, easily digestible and highly beneficial for our bodies, is a wonderful reward for all our efforts!

The oranges are peeled one by one, cut into cubes and cooked with the onion to preserve the different textures of the ingredients. We believe that these two ingredients, flavoured with a pinch of chilli to enhance their flavour, make the perfect compote to serve with your platters and impress your guests.

To stay true to our region, we simply had to use two of Puglia’s most iconic herbs: thyme and rosemary. Combined with onion, these two ingredients give this product the fragrances, aromas and flavours typical of Mediterranean cuisine. It will feel just like being back on holiday in Puglia!

Paté di Cima di Rapa, 220g
€4,60Aggiungi al carrelloLa cima di rapa è uno degli ortaggi più rappresentativi della Puglia che spesso viene associato alle orecchiette, un connubio che rappresenta una delle ricette più conosciute della nostra regione: “orecchiette e cime di rapa”. Seminata in campo aperto a inizio autunno, il suo raccolto può durare da fine Novembre agli inizi di Aprile (in base alle temperature e alle varietà). La sua raccolta deve essere effettuata rigorosamente a mano e consiste nel tagliare con un coltellino le cime più tenere, lasciando crescere quelle ancora piccole; questa procedura viene ripetuta diverse volte durante il ciclo vitale della pianta. Dopo la raccolta vengono lavate, scottate e macinate con olio extravergine, aglio e peperoncino.
La scelta di fare questo paté è nata dalla voglia di portare sulle tavole di tutti i nostri clienti il vero e autentico sapore di Puglia durante tutto l’anno. È ideale per condire la pasta, ma si può inoltre utilizzare per arricchire crostini e bruschette.

€6,00Aggiungi al carrelloI peperoni Cornaletti, chiamati anche Friggitelli, sono una varietà autoctona Pugliese dal sapore dolce ed intenso. Hanno una forma di corno allungato da cui deriva il nome “cornaletti”. La nostra azienda li coltiva in campo aperto in maniera BIOLOGICA; piantati nel mese di Aprile vengono raccolti tra Agosto ed Ottobre. Raccolti a mano in modo da selezionare i più rossi e dolci, vengono lavati e aperti per eliminare i semi e facilitarne la digestione. Vengono tagliati a dadini e cotti con olio extravergine di oliva, sedano e aglio.
Questa conserva, fra le più antiche della Valle D’Itria, accompagnata da pane fatto in casa costituiva spesso il pranzo dei contadini nei mesi invernali. Con passione continuiamo a proporre questa ricetta tramandata da nostra nonna per farvi conoscere le tradizioni Pugliesi.

Pickled Lampascioni, 300g (drained)
€13,40Leggi tuttoThe lampascione is a bulb rich in minerals that grows to a depth of around 15–20 cm underground. Similar to a small onion but with a slightly bitter taste, it requires a curing process of about 10 days to make it sweeter and more palatable. It must be cleaned by careful, expert hands, which use a small knife to remove the outer layers of the bulb one by one. Once arranged in jars by hand, brine is added and they are pasteurised raw. This process preserves their crunchiness and the countless health benefits they offer.
