Courgettes and Mint Pâté, 220g

Our courgettes are planted in open fields in April and harvested by hand in June and July. On the very day they are harvested, they are sorted, washed, sliced and placed in special containers to be salted. Once the excess liquid has drained off, they are washed again with water and vinegar, tossed with extra virgin olive oil and mint – which gives them a hint of freshness – and placed in jars.
