Apulian-style turnip greens, 220g

Turnip greens are one of the most characteristic vegetables of Puglia and are often associated with orecchiette, one of the region’s best-known dishes. Sown in open fields in early autumn, they can be harvested from late November to early April (depending on the temperature and the variety). They must be harvested by hand, as a small knife is used to cut the tenderest tops whilst allowing the smaller ones to continue growing; this process is repeated several times throughout the plant’s life cycle. After harvesting, they are washed, blanched and carefully placed by hand into jars with extra virgin olive oil, garlic and chilli.
