  • Wild Onion Lampascioni Pâté, 240g

    The lampascione is a bulb rich in minerals that grows to a depth of around 15–20 cm underground. Similar to a small onion but with a slightly bitter taste, it requires a production process lasting around 10 days to make it sweeter and more palatable. Cleaning it requires careful, expert hands, which use a small knife to remove the outer layers of the bulb one by one, before blanching them in water and vinegar. They are then ground with the addition of extra virgin olive oil, and the pâté is placed in jars, ready to be enjoyed.

    The result? A sweet, spreadable product whose flavour will remind you of our beloved Puglia.

  • Zucchine e Menta in olio extravergine di oliva, 220g

    Le nostre zucchine vengono piantate in campo aperto nel mese di Aprile e raccolte manualmente nei mesi di Giugno e Luglio. Il giorno stesso della raccolta vengono selezionate, lavate, affettate e sistemate in apposite vasche, per essere successivamente salate. Una volta persi i liquidi in eccesso, vengono nuovamente lavate con acqua e aceto e sistemate manualmente nei vasetti con olio extravergine, aglio, peperoncino e menta che dona loro un sentore di freschezza.

    “Zucchine e menta” è una tipica ricetta estiva pugliese che le nostre nonne spesso proponevano durante banchetti familiari. Un piatto che va assaporato freddo, dal gusto rinfrescante che può essere utilizzato sia come antipasto che come contorno.

  • Zucchine Essiccate al Sole, 220g

    Le nostre zucchine vengono piantate in campo aperto nel mese di Aprire e raccolte manualmente nei mesi di Giugno e Luglio. Il giorno stesso della raccolta vengono selezionate, lavate, affettate e sistemate sui telai di essiccazione, per essere successivamente salate e lasciate al sole per 4-5- giorni. Il sale e il calore naturale del sole dei nostri mesi estivi permettono un processo di essicazione lento e naturale. Una volta raggiunta la perfetta essicazione vengono nuovamente lavate con acqua e aceto e sistemate nei vasetti con olio extravergine, aglio e peperoncino. Questo processo richiede una intensa settimana di lavoro e da 10 Kg di zucchine fresche si ottengono circa 500/600 gr di prodotto essiccato.

  • Apulian-style Aubergine Caponata, 220g

    Grown in open fields on our farm in April and May, they are harvested by hand between August and October. They are selected, washed, peeled and sliced into whole slices. We prefer to slice them to maintain a fleshy and crunchy texture. Processed raw with vinegar to preserve the properties of the aubergine, they are bottled by hand with the addition of extra virgin olive oil, chilli pepper and garlic.

Our experience shows us that the first harvest is the best and most prized, which is why we use the largest and meatiest artichokes in our oil-preserved products. Within a few hours of harvesting, they are trimmed by hand with a small knife to remove the outer leaves, cut into wedges and blanched.

    What makes our cream special is that we use only the heart of the artichoke – the finest part – with the sole addition of extra virgin olive oil and mint. The use of top-quality ingredients makes all the difference.
